This GORGEOUS side dish couldn't be easier to make, and it couldn't be more delicious! Grilled Corn, topped with Mexican table cream, chipotle peppers, and Queso Fresco makes for total yum!

Grilled Chipotle Creamed Corn

With a little "ole!" from Mexican ingredients like chipotle peppers, fresh cheese and cream, this grilled corn will rock your Labor Day grilling fiesta!


Without exaggerating, this is the single raddest, fabbest, baddest, most fabtastic side dish eva.

No, you won't believe me. Because, surely, you've had other side dishes that could compare, right? You've had veggies sauteed in butter, loaded sweet potatoes, green beans with bacon and bacon and more bacon.

Nixed. All of them. Not a one can hold a candle to this spicy, homemade Chipotle Creamed Corn on the Grill. Absolutely the best side dish recipe ever created by human hands. You have been warned.

Run to the store. Just do it. Run and get yourself a bag of Cascadian Farms Sweet Corn. Pull open the bag like the Hulk.

Cascadian Farms Sweet Corn

Toss that corn into a foil dish. Whatever will fit on your grill. Big foil dish, little foil dish, any foil dish will do. Just hurry! Hurry! Toss it on your grill. You could have this in your mouth in less than 20 minutes.

Nab yourself a few basic ingredients that you found in the Mexican food aisle (refrigerated section of most grocers).

Mexican ingredients for creamed corn

Pour in the Mexican Table Cream.

Pour cream into corn

Then chipotle peppers. Sweet happy chipotle peppers. It's getting hot in here.

Add chipotle peppers

Stir, stir, stir like the wind. The quicker you stir, the faster you eat!

Spicy creamed corn

Top with a sprinkling of Queso Fresco cheese, fresh parsley or cilantro, and you're done! Try serving this gorgeous side dish with your favorite grilled meat, fresh veggies, and a giant green salad for the ultimate end-of-summer party picnic!

Chipotle Creamed Corn on the Grill!

Ingredients

bag Frozen Cascadian Farms Sweet Corn
2
tablespoons vegetable oil
1
cup Mexican Table Cream *
2
chipotle peppers in adobo sauce, finely chopped
1/2
cup queso fresco (Mexican
1/2
cup cilantro or parsley, finely chopped
salt
to taste

Directions

  • 1 Preheat grill to high.
  • 2 Toss frozen sweet corn into a large, foil pan. Drizzle with vegetable oil and stir to coat. Place on hot grill and cook until corn is sizzling hot and a few pieces are slightly browned, about 10-15 minutes.
  • 3 Pour Mexican table cream over the corn, stir to coat. Fold chipotle peppers into the mixture. Sprinkle with Queso Fresco and parsley or cilantro. Serve and enjoy!
  • 4 *SUBSTITUTIONS: If you can't find these Mexican ingredients at your store, substitute Half and Half for the table cream, and mild feta cheese for the queso fresco.
