This may be the most unbelievable potato salad...eva. A creamy, spicy, slightly sweet sauce coats mounds of cheddar-bacon-chive-cilantro tossed potatoes. Potato perfection!

Ingredients

pounds Fresh golden or Idaho potatoes, baked or boiled until tender

ounces sour cream
1
carton (5.3 ounce) Yoplait® Greek 100 protein vanilla yogurt
1/2
cup mayonnaise
4
ounces chipotle peppers in adobo sauce, chopped
10
slices cooked bacon, crumbled
2
cups sharp cheddar cheese, shredded
1/2
cup cilantro, chopped
1/2
cup green onions, chopped
salt and pepper to taste

Directions

  • 1 Allow cooked potatoes to cool completely. Dice into bite-sized pieces.
  • 2 In a large bowl, whisk together sour cream, Yoplait®, mayonnaise, and chipotle peppers. (If you like spice, feel free to add more than 4 ounces of the peppers.) Add potatoes to bowl and toss until coated with creamy sauce. Salt and pepper to taste.
  • 3 Add bacon, shredded cheddar, cilantro, and green onions. Stir until mixed. Garnish with any extra cheddar, cilantro and green onions, if desired.
  • 4 Serve and enjoy!
