Pretzels and chocolate. Yeah, that works.
When it comes to no-bake desserts, there are no-bake cookies and no-bake bars. I once made no-bake energy bars, and though it’s not recommended, there’s always no-bake sushi cake. But anyway.
The point I’m trying to make is there are a handful of great no-bake treats. But none of them – and I do mean NONE OF THEM (joyful shouting intended) taste as good as THIS AMAZING PIE (joyful shouting double intended).
Salty pretzel pie crust. Creamy dark chocolate mousse. Salted caramel drizzle. Complete and utter dessert splendor.
No matter what your favorite no-bake treat has been until this point in your existence, prepare for this recipe to take the cake. But not the sushi cake. Let’s just say it takes the pie, instead.
Here’s how to make it. Get ready, this goes quick!
Start by crushing pretzels in a food processor. You’ll need about two cups of crumbs to make a proper crust.
Mix the pretzel crumbs with melted butter and sugar and place into the bottom of a pie pan.
Press the crumbs into the pan. Voila! Your pretzel pie crust is ready! Pop it into the freezer for about 10 minutes to make sure it sticks together.
Next up? Three simple basics: chocolate chips, cream and a smidgen of powdered sugar. Believe it or not, this is all you need to make a rollicking good mousse.
Start by whipping the whipped cream until it’s whippy and sweet. Add powdered sugar and vanill. Transfer about two cups of this vanilla mixture into a bowl for later.
Then slowly add in melted chocolate chips, beating the mixture until it’s fluffy.
And that is seriously it! Your mousse is ready to go in the pretzel pie crust. Just spoon it in there, spread it all fancy like…
And top with the vanilla whipped cream.
If you’re feeling saucy, or salty, or whatever it is that's awesome, decorate your pie with pretzel sticks and drizzled salted caramel sauce. A bit of flaked sea salt sprinkled up top makes a gorgeous garnish, as well.
Refrigerate your pie until ready to serve. Then pull its gleaming goodness from the fridge and prepare to slice, dice and fall in love.
