Looking for a chocolate dessert? Try these delicious meringue cookies – the perfect Christmas treat.

Ingredients

Cookies

3
egg whites
1/4
teaspoon cream of tartar
1/2
cup sugar

Filling

1
(6-oz.) pkg. (1 cup) semi-sweet chocolate chips, melted
1/4
cup sugar
1
tablespoon coffee-flavored liqueur
1
egg, beaten
1/4
cup finely chopped walnuts

Directions

  • 1 Heat oven to 275°F. Line cookie sheets with parchment paper or grease and flour cookie sheets. In small bowl, beat egg whites and cream of tartar at medium speed until soft peaks form. Gradually add 1/2 cup sugar, beating at high speed until stiff peaks form. Drop mixture by scant teaspoonfuls onto paper-lined cookie sheets.
  • 2 In medium bowl, combine all filling ingredients except walnuts; mix well. Stir in walnuts. Drop 1/2 teaspoon filling onto each cookie.
  • 3 Bake at 275°F. for 30 minutes. DO NOT OPEN OVEN. Turn oven off; leave cookies in oven with door closed for 10 minutes. Remove from oven; cool completely. Remove cookies from paper.
Tips

Strong coffee can be used in the filling in place of the coffee liqueur.

Parchment paper is sold in grocery stores along with other paper, plastic, and foil wraps. With its nonstick surface, parchment paper works well underneath cakes, cookies, and meringues.

To make cocoa cookies meringues, add 2 teaspoons of unsweetened cocoa with the 1/2 cup of sugar.
