Ingredients

  • SALAD
  • 2  medium oranges
  • 1  medium banana
  • 1  large unpeeled red apple
  • 2  to 3 cups shredded romaine or other lettuce
  • 1  (20-oz.) can unsweetened pineapple chunks, drained
  • 1  (16-oz.) can sliced beets, drained
  • 1  medium jicama, cut into sticks, or 8-oz. can sliced water chestnuts, drained
  • 1  lime, cut into wedges or slices
  • 1/2  cup dry roasted peanuts
  • 1/2  cup pomegranate seeds
  • 2  tablespoons sugar, if desired
  • DRESSING
  • 1/2  cup olive or vegetable oil
  • 1/4  cup red or white wine vinegar
  • Salt to taste

Directions

  1. Peel oranges. Over bowl to save juice, section oranges, removing membranes. Slice banana and apple into juice; toss fruit and juice. Drain. Line large platter with shredded lettuce. Arrange oranges, banana, apple, pineapple, beets and jicama on lettuce. Garnish with lime. Sprinkle with peanuts, pomegranate seeds and sugar. Just before serving, in jar with tight-fitting lid, combine all dressing ingredients; shake well. Drizzle over salad.
