A moist little cake loaded with apples and spiced with cinnamon and nutmeg. No frosting needed!

Ingredients

Cake

cup Gold Medal™ all-purpose flour
1/2
cup sugar
1
teaspoon baking powder
1/2
teaspoon salt
1/2
teaspoon ground cinnamon
1/4
teaspoon ground nutmeg
1/4
cup fat-free egg product
2
tablespoons canola oil
2
tablespoons applesauce
1
teaspoon vanilla
2
cups coarsely chopped peeled apples (2 medium)

Glaze, if desired

1/2
cup powdered sugar
1/8
teaspoon vanilla
Dash cinnamon
1
to 2 tablespoons milk

Directions

  • 1 Heat oven to 350°F. Spray bottom and side of 8- or 9-inch round cake pan with cooking spray.
  • 2 In large bowl, mix flour, sugar, baking powder, salt, 1/2 teaspoon cinnamon and the nutmeg until well blended. Stir in egg product, oil, applesauce, and1 teaspoon vanilla until flour mixture is moistened. Stir in apples. Batter will be very thick and chunky. Spread in pan.
  • 3 Bake 35 to 45 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; remove from pan to cooling rack.
  • 4 Meanwhile, in small bowl, mix powdered sugar, 1/8 teaspoon vanilla, dash cinnamon and 1 tablespoon milk. Stir in additional milk, 1 teaspoon at a time, until smooth and thin enough to drizzle. Drizzle over warm cake. Serve warm.
Tips  

Choose apples that look fresh, are bright in color and have a fresh apple aroma.
