Sweet and spiced chicken served with apple and sweet potato, flavored with cider, cinnamon and cloves and sprinkled with crunchy pecans. Dinner ready in just 30 minutes!

Ingredients

boneless skinless chicken thighs

cup apple cider or apple juice

(17-oz.) can sweet potatoes, drained

apple, sliced

cup pecan pieces

Directions

  • 1 Heat oil in Dutch oven over medium-high heat until hot. Sprinkle chicken with salt; add to skillet. Cook 4 to 5 minutes or until chicken is browned, turning once.
  • 2 Pour apple cider over chicken. Add cinnamon and cloves. Bring to a boil. Reduce heat; simmer 5 minutes.
  • 3 Add sweet potatoes and apple; cover and simmer an additional 10 minutes or until chicken is fork-tender and juices run clear. Remove and discard cinnamon and cloves. Sprinkle with pecans.
Tips  

Fall brings a bountiful variety of apples. For this recipe, use apples that are good for cooking, such as Rome Beauty, Johathan and Stayman.

Sweet potatoes are an excellent source of vitamins A, a nutrient that is believed to offer protection from cancer and the degenerative aspects of aging.

Round out this hearty fall meal with the best garden produce; toss mixed greens with diced zucchini, yellow crookneck squash, red bell pepper and herb vinaigrette. Accompany it all with steamed fresh green beans and whole-wheat rolls.
