Add this slow-cooker, Mexican-inspired chicken dinner to your regular dinner rotation.

Ingredients

1 1/2
lb boneless skinless chicken breasts
2
tablespoons Old El Paso™ taco seasoning mix (from 1-oz package)
1
jar (16 oz) green tomatillo salsa (salsa verde)
1
lime
1/4
cup chopped fresh cilantro
1/2
cup sour cream
Hot cooked rice

Directions

  • 1 Spray 3- to 4-quart slow cooker with cooking spray. Place chicken in slow cooker. Sprinkle taco seasoning over chicken; pour salsa over chicken.
  • 2 Cover; cook on Low heat setting 6 to 8 hours. About 30 minutes before serving, squeeze lime over chicken. Stir in cilantro.
  • 3 Using 2 forks, shred chicken in slow cooker. Stir in sour cream. Serve chicken over rice. Garnish with additional cilantro, if desired.
Tips

If you need dinner to be done faster, you can use the High heat setting on the slow cooker and cook the chicken for about 4 hours instead.

Use the shredded chicken as a burrito or taco filler instead of serving over rice.
