    Ingredients

    • 1 1/3 cup white rice
    • scant 1 1/3 cup water
    • scant 1 1/3 cup chicken broth, preferrably organic and all-natural
    • 1 teaspoon olive oil
    • juice of 1 lime
    • 1/4 teaspoon salt, plus more to taste (if desired)
    • 1/2 teaspoon ground cumin
    • 1/4 teaspoon black pepper
    • zest from 1 lime
    • 1/3 cup thinly sliced green onion
    • 1/2 cup finely chopped cilantro

    Directions

    1. 1Combine water through pepper in a medium sized pot over medium-high heat.
    2. 2Bring to a rolling boil. Turn heat to low. Cover with a lid and simmer for 17 minutes.
    3. 3Turn heat off, and with the lid still on, let the rice steam an additional 5 minutes.
    4. 4Remove the lid, fluff with a fork and stir in the lime zest, green onion, and cilantro.
    5. 5Serve.

    I have used 1/2 jasmine rice with white rice and squeezed an orange in it.... yummy. lime & ciantro sounds terrific. any other ideas? we LOVE rice

    WOW, excellent rice dish & so easy! My husband isn't a fan of most rice, but this one was even a hit with him! We served it with the Carmelized Chile Shrimp--what an amazing meal! We definitely will have this often. I did find the recipe instructions to be a little off. It leaves out a lot in the description of items in the recipe item list. So, all your spices, chix broth, water, oil, lime, & rice get mixed together in pan then boiled--the onions, cilantro & lime wait till the end.

    I made this last night and was awesome! Very easy to make. I think next time I will add diced tomatoes and green chilies
