If you thought cinnamon quick bread was delicious and easy to make, wait until you try it as a tempting coffee cake.

Ingredients

Coffee Cake

package Betty Crocker™ cinnamon streusel quick bread mix
2/3
cup water
2
tablespoons vegetable oil
2
eggs
1/2
cup raisins or other chopped dried fruit
1/4
cup chopped nuts

Vanilla Glaze

1/4
cup powdered sugar
1
to 1 1/2 teaspoons milk
1/8
teaspoon vanilla

Directions

  • 1 Heat oven to 350ºF. Grease bottom only of 8- or 9-inch square pan. In medium bowl, stir quick bread mix, water, oil and eggs until well blended (batter may be slightly lumpy).
  • 2 Pour half of the batter (about 1 1/3 cups) into pan; sprinkle with three-fourths of the Streusel (about 3/4 cup). Sprinkle with raisins. Pour remaining batter over raisins in pan; spread carefully. Sprinkle with remaining Streusel and the nuts; press gently.
  • 3 Bake 8-inch pan 35 to 40 minutes, 9-inch pan 25 to 30 minutes, or until toothpick inserted in center comes out clean. Cool completely, about 1 hour.
  • 4 In small bowl, mix all glaze ingredients until smooth and thin enough to drizzle. Drizzle over coffee cake.
Tips  

Dessert, anyone? Heat slices of this cake and serve warm with French vanilla ice cream drizzled with chocolate syrup.

In doubt about finding half the batter amount? Don’t pout, measure it out! Half the batter is about 1 1/3 cups, and 3/4 of the streusel is about 3/4 cup. Use a rubber scraper to spread and smooth the batter.
