    Use a knife dipped in a glass of water to cut the bars more easily. Clean the knife and dip again in water when needed.

Ingredients

  • Crust
  • 1 1/2  cups Original Bisquick® mix
  • 1/2  cup sugar
  • 1  teaspoon grated lime, lemon or orange peel
  • 1/3  cup firm butter or margarine
  • Filling
  • 3  packages (8 oz each) cream cheese, softened
  • 1 1/2  cups sugar
  • 2  tablespoons Original Bisquick® mix
  • 1  teaspoon grated lime, lemon or orange peel
  • 1 1/4  cups milk
  • 3  tablespoons lime, lemon or orange juice
  • 1  teaspoon vanilla
  • 3  eggs
  • Citrus peel, if desired

Directions

  1. 1Heat oven to 375°F. In medium bowl, stir crust ingredients except butter. With pastry blender (or pulling 2 table knives through ingredients in opposite directions), cut in butter until mixture looks like coarse crumbs. Pat on bottom of ungreased 15x10x1-inch pan. Bake 10 minutes.
  2. 2Meanwhile, in large bowl, beat cream cheese, 1 1/2 cups sugar, 2 tablespoons Bisquick mix and 1 teaspoon lime peel with electric mixer on medium speed until blended and fluffy. On low speed, beat in milk, lime juice, vanilla and eggs until blended. Beat on low speed 2 minutes longer. Pour over partially baked crust.
  3. 3Bake 35 to 40 minutes or until knife inserted in center comes out clean. Cool completely, about 1 hour. Refrigerate until ready to serve. For mini cheesecakes, cut into 10 rows by 6 rows. Garnish with citrus peel. Store covered in refrigerator.

WOW! This is an outstanding recipe! The crust is made to fill a 15" x 10" x 1" cookie pan. You under bake the crust for 10 minutes. The filling is substantially citrus flavored, when completed mixing, pour onto the cooled crust. Bake 35 to 40 min.- until knife in center tests clean. Cool completely, about 1 hour. Refrigerate until ready to serve. While it is in the refrigerator, slice 1 or 2 limes into thin slices to further cut into tiny wedges. If you can't successfully create those tiny wedges - to be used to decorate the top of the mini cheesecakes, then you'll have to trim the peel into roughly 2"L x 1/8"W strips. If you chose to serve mini cheesecakes, 'cut into 6 rows long by 10 rows wide' as soon as you remove from the refrigerator! Once cut and decorated, keep stored in the refrigerator. [As you place the tiny strips on-top-of the mini cheesecakes, give each strip a twist in the center just as you place it on top of the baked treat (it will give you a sudden shot of lime juice as-well-as a twist in the decorative peel)!] For a more exotic shaped treat you will need your yard stick. (Well washed & dried.) Lay it across the baking sheet from 1 corner across the pan to another corner - on the far side of the pan. On each corner, you want the yardstick on top of the point of each corner, giving the point as the center of the slice. You will want to use a pizza cutter to cut up-&-down on either side of the YS. (You will need a small bowl of water to dip the cutter into, use a paper towel to wipe the cutter off, & keep it clean). Staying on the same angle, slide the YS upon the same direction using the previous cut as your guide for the next strip. When finished cutting in that direction, turn the pan 1/4 turn from the first cuts. This time you want to line-up the alternate direction with the YS. You want to cut from a different set of corners with the YS. Check out the direction of the angles by making this second cut? You want to cause a diamond shaped mini cheesecake, with this second set of cuts! After using the pizza cutter to do the first set of cuts, go ahead and use a smaller knife with a pointed tip. The second knife will confirm that the shape of the mini cheesecakes, will be confirmed as diamond shaped with the sharp pointed edges. Enjoy!!!
