Citrus Quinoa and Chicken Salad

A tasty and healthy salad that is easy to throw together and full of flavor. Makes a great side dish, or a meal.

Ingredients

  • 1 cup quinoa, uncooked
  • 1/2 rotisserie chicken, shredded
  • 3 mandarin oranges, peeled and seperated into wedges
  • 1/4 cup fresh cilantro, chopped
  • 1 avocado, cut into chunks
  • 2 tbsp olive oil
  • 1 lime
  • Salt & pepper to taste

Steps

    Cook quinoa per package instructions.
  • 2
    Combine in a large bowl: cooked quinoa, shredded chicken, mandarin orange slices, chopped cilantro, and olive oil.

    Zest the lime over the bowl and mix.
  • 4
    Juice the lime, add to the bowl, and mix.
  • 5
    Add salt and pepper to taste.
