Wrap the tasty ingredients of cobb salad into a crunchy lettuce wrap! You can have 2 lettuce wraps for only 220 calories.

Ingredients

Bibb lettuce leaves

cups shredded cooked chicken breast

small avocado, pitted, peeled, cut into thin wedges

medium tomato, cut into thin wedges

cup finely chopped red onion

cup light blue cheese dressing

tablespoon red wine vinegar

slices bacon, crisply cooked, crumbled

Directions

  • 1 Place lettuce leaves on plate. Divide chicken among lettuce leaves, placing lengthwise in center. Layer with avocado and tomato wedges. Sprinkle with red onion.
  • 2 In small bowl, mix dressing and vinegar. Drizzle over lettuce wraps. Top with crumbled bacon.
Tips  

In a hurry? Try using precooked bacon. You can heat the bacon quickly in the microwave so it will crumble more easily.

Deli chicken or rotisserie chicken are easy ways to get cooked chicken for this salad.
