Have you jumped aboard the coconut milk and coconut water craze? How about the coconut oil craze? I swear, I don’t know a single person without a tub of coconut oil in their house at this point!
It would not surprise me if 2016 is the year the coconut becomes president.
Like any good little minion who jumps on board with all the trends, I love the stuff. I use the oil in cooking and as lotion. I’ve yet to brush my teeth with it, but I know people that do.
And coconut water? Well, we drink the stuff like it’s going out of style.
And now we’re making pancakes with it! Because, hey, why not?
You’ll start with a box of Bisquick®, some coconut water and a couple of eggs.
Whisk all that together. (Just be sure not to over mix.)
Cook ‘em up and top with syrup! I like to drown mine, but you do you. The pancakes are just as light and fluffy as you’d want, but they soak up all that coconut water flavor. Such a fun surprise in a pancake!
