Confetti Egg Cups

These Confetti Eggs Cups are not only super easy to make (my 6 year old put these together!), they are absolutely gorgeous and would be a perfect dish to take to Holiday brunches or get-togethers.

    Ingredients

    • 12 slices thin ham (or deli lunchmeat)
    • 12  eggs
    • 1 cup shredded cheddar cheese
    • 1/2 cup finely chopped red pepper
    • 1/2 cup finely chopped green pepper

    Directions

    1. 1Preheat oven to 375 degrees.
    2. 2In a muffin or cupcake tin, press one slice of ham into each space.
    3. 3Crack an egg on top of each ham cup.
    4. 4Season with salt and pepper, to taste.
    5. 5Sprinkle red and green pepper on top of each egg.
    6. 6Bake at 375 degrees for 10 minutes.
    7. 7Remove from oven, sprinkle each egg cup with cheese and return to oven for 5-10 minutes (until eggs are cooked according to your taste).
    8. 8Remove from oven and serve.

    I'm sorry you had trouble with your pans, @Anonymous! The stainless steel silver scrubbies found in most cleaning aisles work wonders on tough to scrub pots. :)

    While they are amazing fresh, I made a big batch on Sunday morning and my husband continued to eat them through the week. We made some that were "scrambled" and some just over medium. He said the scrambled ones heat up better.
