  • 1  (15-oz.) box Pillsbury® Refrigerated Pie Crusts
  • 1  teaspoon flour
  • FILLING
  • 3  tablespoons Parkay® margarine or butter
  • 2  tablespoons flour
  • 2  tablespoons sugar
  • 1/2  to 1 teaspoon salt, if desired
  • 1  cup milk
  • 3  eggs
  • 1/3  cup chopped green pepper
  • 1  (17-oz.) can Green Giant® Golden Whole Kernel Corn, drained
  • 4  slices bacon, cooked, crumbled

Directions

  1. Prepare pie crust according to package directions for unfilled one-crust pie using 9-inch microwave-safe pie pan. (Refrigerate remaining crust for later use.) Flute, if desired. Prick crust generously with fork. Microwave on HIGH for 6 to 8 minutes, rotating pan 1/2 turn every 2 minutes. Crust is done when surface appears dry and flaky. Cool.

  2. In 1-quart microwave-safe bowl, microwave margarine on HIGH for 45 seconds or until melted. Blend in flour, sugar and salt. Stir in milk and eggs; blend well using wire whisk. Stir in green pepper and corn. Microwave on HIGH for 5 minutes, stirring every 1 1/2 minutes until smooth using wire whisk. Pour into cooked pie crust; sprinkle top with bacon. Elevate pan on inverted microwave-safe dish or on shelf provided. Microwave on HIGH for 4 to 6 minutes, rotating pan once halfway through cooking. Pie is done when knife inserted near center comes out clean. Let stand on flat surface for 5 minutes before serving. Garnish with additional green pepper or as desired.
