Enjoy this cold salad packed with chicken, vegetables and couscous, tossed in a tangy dressing - a wholesome dinner.

Ingredients

SALAD

cup uncooked couscous

cups shredded cooked chicken

cup chopped green bell pepper

cup sliced celery
1/2
cup shredded carrot

green onions, sliced

DRESSING

1/3
cup orange juice
1/3
cup oil
1/4
cup chopped fresh parsley

tablespoons lemon juice
2
tablespoons soy sauce
1
teaspoon finely chopped gingerroot or 1/4 teaspoon ground ginger
Dash salt
1/8
teaspoon pepper

Directions

  • 1 Cook couscous as directed on package. Uncover; cool 20 minutes.
  • 2 In large bowl, combine couscous and all remaining salad ingredients; toss gently.
  • 3 In small jar with tight-fitting lid, combine all dressing ingredients; shake well. Pour dressing over salad; toss gently. Cover; refrigerate 1 to 2 hours to blend flavors. If desired, serve on lettuce-lined plates.
Tips  

Couscous, a North African staple pasta that resembles grain, is available in a quick-to-prepare version that cooks in just 5 minutes.

Use rice in place of the couscous, and cook according to package directions.
