Ingredients

cups cranberries

medium red bell pepper, chopped (1 cup)

small onion, finely chopped (1/4 cup)

cup packed brown sugar

cup golden raisins

cup white vinegar

teaspoons finely chopped gingerroot

clove garlic, finely chopped

Directions

  • 1 Mix all ingredients in 2-quart saucepan. Heat to boiling, stirring frequently; reduce heat. Simmer uncovered about 1 hour, stirring frequently, until mixture thickens and fruit is tender. Store covered in nonaluminum container in refrigerator up to 2 weeks.
