Cranberry-Apple Porridge

The wholesome goodness of fruit and oats cooked into a piping-hot porridge makes a satisfying alternative to cold cereal. Add variety with milk, fresh apples, and raisins instead of dried fruit.

Ingredients

  • 1/2  cup dried apples, chopped
  • 1/2  cup sweetened dried cranberries
  • 1 1/2  cups water*
  • 1/4  cup firmly packed brown sugar
  • 1/4  teaspoon cinnamon
  • 1  tablespoon margarine or butter, softened
  • 2  cups milk
  • 2  cups quick-cooking rolled oats
  • 1/8  teaspoon salt

Directions

  1. In large saucepan, combine apples, cranberries and water; cook over medium-high heat until mixture comes to a boil. Cook 5 minutes, stirring occasionally.

  2. Meanwhile, in small bowl, combine brown sugar, cinnamon and margarine; mix well. Set aside.

  3. Add milk, oats and salt to cooked fruit mixture; mix well. Return to a boil, stirring frequently. Cook and stir 1 minute.

  4. To serve, spoon porridge into 4 ovenproof bowls. Top each with brown sugar mixture. Place bowls on cookie sheet. Broil 6 to 8 inches from heat for about 1 minute or until topping bubbles. If desired, serve with additional milk.
