Looking for a yummy fruits dessert? Then check out these pears coated with raspberry-cranberry drink and topped with cherries.

Ingredients

large pears, peeled, halved and cored
1
cinnamon stick
2
cups raspberry-cranberry drink
1
tablespoon cornstarch
2
tablespoons white vanilla chips
1
teaspoon oil
1/4
cup fresh raspberries, if desired

Directions

  • 1 In medium saucepan, combine pear halves, cinnamon stick and raspberry-cranberry drink. Cook over medium heat for 5 to 10 minutes or until pears are slightly tender. Cool slightly. Cover; refrigerate at least 2 hours or until pears are pink.
  • 2 Remove pears from saucepan. Reserve 1 cup liquid in saucepan; stir in cornstarch. Cook over medium heat until mixture boils, thickens and becomes clear. Boil 1 minute, stirring constantly. Return pears to saucepan; cover and refrigerate at least 4 hours or until cold.
  • 3 Just before serving, in small saucepan, combine chips and oil. Melt chips over very low heat, stirring occasionally.
  • 4 To serve, place pear halves on individual dessert plates. Spoon sauce over and around pears. Drizzle each with melted chips. Top with raspberries.
Tips  

Bosc pears, with their firm texture, are a good choice for this poached dessert. The fruit takes on a rosy tinge from the raspberry-cranberry juice poaching liquid.
