    Ingredients

    • Frosting
    • Cream Cheese, softened 2 lb, 4 cups
    • Butter, unsalted, softened 2lb, 4 cups
    • Confectioners Sugar 8 lb, 34 cups
    • Pecan, chopped 4 oz, 1 cup
    • Coconut, shredded 6 oz, 1 1/2 cup
    • Water, cool (approx 72°F) 4 oz, 1/2 cup

    Directions

    1. 1 Combine softened cream cheese and soften butter in mixer bowl. Mix using paddle attachment on low speed until combined, approximately 2 minutes. Stop mixer. Scrape bowl and paddle. Mix an additional 5 minutes on medium speed. Add confectioner's sugar. Mix on low speed for an additional 1 minute to incorporate sugar. Mix on medium speed for 4 minutes. Add Pecans, coconut and water. Mix on low speed for 2 minutes. Stop mixer. Scrape bowl and paddle. Mix on low speed for an additional minute. Refrigerate leftover frosting for up to one week.
