Ingredients

cup apricot preserves
1/2
each red and green jalapeño chile, seeded, finely chopped

teaspoon grated gingerroot or 1/4 teaspoon ground ginger

teaspoon cider vinegar

package (8 oz) 1/3-less-fat cream cheese (Neufchâtel), well chilled

fat-free crackers
Whole green chile

Directions

  • 1 In small bowl, mix preserves, 1/2 red and 1/2 green chopped chiles, gingerroot and vinegar until well blended.
  • 2 Cut cream cheese diagonally from one corner to the opposite corner. On serving plate or tray, place long sides of cheese together forming a triangle or tree shape.
  • 3 Top cheese with preserves mixture. Place 1 small whole green chile at base for tree trunk. Serve with crackers.
