  • TIPS

    * Use decorating bag or make a small cut in corner of small plastic bag. Fill bag with cheese mixture; twist or seal top. Gently squeeze mixture into strawberries.

Ingredients

  • 6  large fresh strawberries
  • 1/4  cup 1/3-less-fat cream cheese (Neufchâtel), softened
  • 1/4  cup light ricotta cheese
  • 2  teaspoons powdered sugar
  • 1/4  teaspoon almond extract or vanilla
  • 2  teaspoons chocolate-flavored syrup, if desired
  • 2  fresh mint leaves, if desired

Directions

  1. 1Wash and drain strawberries; remove stems if desired. Stand strawberries up on stem end; cut strawberries into quarters, cutting down to but not completely through stem end. Set aside.
  2. 2In small bowl, combine cream cheese, ricotta cheese, powdered sugar and almond extract; blend well. Pipe about 1 tablespoon cheese mixture into each cut strawberry.* Serve immediately, or cover and refrigerate until serving time.
  3. 3To serve, drizzle each of 2 individual serving plates with 1 teaspoon syrup. Place 3 strawberries on each plate; garnish with mint leaf.
