Enjoy this cheesy garlic flavored risotto made using Progresso™ soup, rice and corn that's ready in 20 minutes. Perfect if you love Italian cuisine.

Ingredients

cups Progresso™ reduced-sodium chicken broth
1
cup water
4
cloves garlic, finely chopped
1
cup uncooked Arborio or regular medium-grain white rice
3
cups frozen whole kernel corn
1/2
cup grated Parmesan cheese
1/3
cup shredded mozzarella cheese
1/4
cup chopped fresh parsley

Directions

  • 1 Heat 1/3 cup of the broth to boiling in 10-inch skillet. Cook garlic in broth 1 minute, stirring occasionally. Stir in rice and frozen corn. Cook 1 minute, stirring occasionally.
  • 2 Stir in remaining broth. Heat to boiling; reduce heat to medium. Cook uncovered 15 to 20 minutes, stirring occasionally, until rice is tender and creamy; remove from heat.
  • 3 Stir in cheeses and parsley.
Tips  

Chopped fresh garlic, available in jars in the refrigerator section of the supermarket, is a real time-saver. It makes this quick-to-prepare dish even easier.
