    Ingredients

    • 2 cups Romaine lettuce
    • 1/4 cup shredded carrots
    • 1/4 cup purple Cabbage
    • 1 1/2 cups small Shrimp
    • 2 tbsp. olive oil
    • 1 tbsp. Creole seasoning
    • 4 slices pineapple
    • 1/4 cup mandarin oranges
    • 2 tbsp. dried cherries
    • green onions - to taste (optional)
    • cilantro - to taste (optional)
    • sesame seeds - to taste (optional)

    Directions

    1. 1Heat 1 tbsp. oil over medium-high in a cast iron skillet.
    2. 2Rinse & peel off tails of shrimp (unless otherwise done).
    3. 3Place into a bowl & toss with Creole seasoning and remaining olive oil.
    4. 4Cook on high until shrimp turns white & there is a nice crust on the outside.
    5. 5Place on bed of lettuce surrounded by 4 slices of pineapple. Top with oranges, cherries, onions, cilantro & sesame seeds & serve with your favorite dressing.
