    Ingredients

    • 1 tablespoon vegetable oil
    • 1/2 cup white onion, coarsely chopped
    • 1 green bell pepper, seeded and diced
    • 2 cloves garlic, minced
    • 1 (18 ounce) can Fire Roasted Tomato Recipe Starters
    • 1 (10 ounce) can Muir Glen diced tomatoes, undrained
    • 1 cup of water
    • 1/2 teaspoon dried Italian seasoning
    • 1 -2 teaspoons Cajun seasoning
    • 1 (15 ounce) can small red beans, undrained
    • 1 (15 ounce) can butter beans, undrained
    • 2 cups cooked rice

    Directions

    1. 1In a small skillet, heat the oil.
    2. 2Add the onions, bell pepper and garlic and sautee until slightly softened but still crisp.
    3. 3Add mixture to the slow cooker. Add the Fire Roasted Recipe Starter, diced tomatoes, water, Italian seasonings, Cajun seasonings, red beans, and butter beans to the slow cooker and give a quick stir.
    4. 4Cook on low for 4-6 hours or on high for 3-4 hours. Stir in rice before serving.
