Enjoy this yummy slow-cooked scrambled egg recipe made with ham and vegetables - perfect for a wonderful dinner.

Ingredients

dozen eggs

cup half-and-half

cups diced cooked ham

tablespoon butter or margarine

green onions, chopped (1/2 cup)
1
small red bell pepper, chopped (1/2 cup)
1
cup shredded Cheddar cheese (4 oz)

Directions

  • 1 Spray 4- to 5-quart slow cooker with cooking spray. In cooker, beat eggs, salt, pepper and half-and-half with electric mixer on medium speed until smooth. Sprinkle with ham.
  • 2 Cover; cook on High heat setting 1 hour, stirring after 30 minutes.
  • 3 Continue cooking 40 to 50 minutes longer, stirring every 10 minutes, until eggs are moist and almost cooked through.
  • 4 In 10-inch skillet, melt butter over medium heat. Add green onions and bell pepper; cook about 5 minutes, stirring occasionally, until pepper is tender. Stir pepper mixture and cheese into eggs. Serve immediately, or reduce to Low heat setting and hold up to 1 hour.
Tips  

Roll eggs and salsa into flour tortillas for breakfast burritos.

Crack eggs and beat with the salt and pepper the night before serving. Cover and refrigerate until ready to cook.
