Wonderful meatless side dish ready in 30 minutes! Enjoy this green beans and mushrooms sprinkled with bread crumbs.

Ingredients

(1-lb.) pkg. frozen cut green beans, thawed*
2
cups sliced fresh mushrooms
1/4
cup finely chopped shallots or onion
2
tablespoons water
1/4
teaspoon salt, if desired
1/8
teaspoon pepper, if desired
1
tablespoon margarine or butter
1
tablespoon olive oil
1
cup fresh white bread crumbs**
1
teaspoon dried basil leaves

Directions

  • 1 In large nonstick skillet, combine green beans, mushrooms, shallots and water; cook over medium-high heat for 3 to 4 minutes or until vegetables are crisp-tender and liquid evaporates. Stir in salt and pepper. Spoon into serving dish; cover to keep warm.
  • 2 In same skillet, melt margarine in oil. Add bread crumbs and basil; cook and stir over medium-high heat until light brown. Sprinkle over vegetables.
Tips  

* To quickly thaw green beans, place in colander or strainer; rinse with warm water until thawed. Drain well. ** Bread crumbs can be made by placing pieces of fresh bread in blender container or food processor bowl with metal blade; blend or process until coarsely chopped.
