Like a lot of cooks, you probably tweak recipes slightly to suit your family's tastes and diets. A little extra spice here... sub low-fat sour cream there...

Heat oven to 425°F. Spray 13x9-inch pan with cooking spray. In shallow dish, mix 2 tablespoons of the butter, the milk, chives, salt and garlic powder.
In another shallow dish, mix crushed cereal, parsley and paprika. Dip chicken into milk mixture, then coat lightly and evenly with cereal mixture. Place in pan. Drizzle with remaining 2 tablespoons butter.
Bake uncovered 20 to 25 minutes or until juice of chicken is clear when center of thickest part is cut (170°F).
Coat the chicken breasts with the crumbs the night before and then bake the next day when you get home from work.

We really liked this recipe, although I had to use Kashi Honey Sunshine cereal, because I didn't have any Total on hand. It was delicious.I read somewhere that a good way to prevent the soggy undersides of oven-fried chicken pieces is to spray a cake cooling rack with vegetable spray, place it on a cookie sheet lined with foil, and then place your prepared chicken pieces one by one on the sprayed cake rack with tongs. This way air gets to the bottom of each piece, and your chicken gets crispy all the way around. Be sure to spray the cake rack thoroughly, or else your cleanup will require quite a lot of elbow grease!

Grasp your dipped and prepared chicken pieces with tongs and place them on the sprayed cake cooling rack. Air gets to both sides of the chicken this way, and so the chicken gets crispy all the way around. Make sure to spray the cake rack very well, or else your cleanup will require a lot of elbow grease!
This was an interesting recipe and my whole family really liked it. I think it could definitely use more garlic and perhaps just a bit of spice from chili powder to give it some real taste. The cereal is pretty bland, so you need something to perk up the dish. One warning though...like any shake-n-bake type recipe, the coating gets soggy on the bottom. Having soggy, hot Total cereal is kind of yucky, so we had to scrape it off. I don't know how you keep the coating from getting soggy on the bottom....any ideas?
