Ingredients

  • SALAD
  • 1  medium cucumber, peeled
  • 1  medium tomato, cut into 8 wedges
  • 2  green onions, cut into 1/2-inch pieces
  • 2  to 4 tablespoons chopped fresh cilantro
  • DRESSING
  • 1  tablespoon sugar
  • 3  tablespoons lime juice
  • 1  tablespoon soy sauce
  • Dash cayenne pepper, if desired

Directions

  1. Cut cucumber into 8 lengthwise spears; cut each spear crosswise into 1/2-inch slices. Cut tomato wedges in half crosswise. In large bowl, combine all salad ingredients; toss lightly. In small bowl, combine all dressing ingredients; blend well. Pour over salad mixture; toss lightly to coat. Cover; refrigerate about 30 minutes to blend flavors.
