    Ingredients

    • Cupcakes
    • 1  box Betty Crocker® SuperMoist® white cake mix
    • Water, vegetable oil and egg whites called for on cake mix box
    • 1/4  teaspoon each gel or liquid food colors (neon pink, neon purple, neon orange, neon green, classic blue)
    • Frosting
    • 1 1/2  cups marshmallow creme
    • 3/4  cup butter, softened
    • 1 1/4  cups powdered sugar
    • Gel or liquid food colors (neon pink, neon purple, neon orange, neon green, classic blue)

    Directions

    1. 1Heat oven to 350°F. Spray 60 mini muffin cups. Make cake batter as directed on box. Divide batter among 5 small bowls, about 3/4 cup each. Make 5 different colors of batter by adding 1/4 teaspoon food color to each bowl; blend well.
    2. 2Fill each muffin cup with 1 level measuring tablespoon batter, making 12 cupcakes of each color.
    3. 3Bake 10 to 12 minutes or until toothpick inserted in center comes out clean. Cool 5 minutes; remove from pan. Cool completely, about 10 minutes.
    4. 4In large bowl, beat marshmallow creme and butter with electric mixer on medium speed until blended. Beat in powdered sugar until fluffy. Divide frosting among 5 small bowls, about 1/3 cup each. Using the same 5 food colors, lightly tint frosting in each bowl to match the cupcake colors.
    5. 5Assemble each popper using 2 mini cupcakes. Cut tops off each cupcake horizontally (save bottoms for another use). Spread or pipe about 1 tablespoon frosting on cut side of 1 cupcake top. Form a sandwich by placing cut side of second cupcake top on frosting; press lightly. Repeat with remaining cupcake tops. Store loosely covered.

    I love the idea for the colorful 'Neon' Cupcake Poppers. I see that making them as 'mini' cupcakes will leave you with extras after cutting off the tops for the 'sandwiches'. There used to be 'standard' and 'Texas - Large' Topper Pans you could buy. It saved making excess bottoms, then. Now, however, you can take the neon colored bottoms you have trimmed off. Buy a Betty Crocker Brownie or Dark Chocolate [Devils Food] Cake Mix, stir up the batters THEN gently fold the colorful bottoms into the chocolate batters. Bake in a 9" x 13" pan, or 2 - 8" round pans. I would buy BC canned frosting in either dark chocolate or vanilla (Cream Cheese maybe?), then frost either item and finish with multi-colored sprinkles.

    As far as the "waste" goes all I did was use the bottoms of the cut-off cupcakes to make cupcake pops!!! I also used philly ready-made cheesecake filling instead of marshmellow creme. I tinted the cheesecake filling w/ neon liquid food coloring and added extracts as well. IE. Lemon extract in tinted yellow cheesecake filling. They were such a hit at my daughter's 2nd b-day party this month!!!! A lot of work but it was so well worth it. If your wondering how to make the "pops" all I did was crumble all of the "bottoms" of the cucakes into a bowl then I added reg. store purchased vanilla icing and mixed the two together. Then you roll into balls insert a pop stick and let set up in the fridge. Once they were hardened enough I tinted more vanilla icing w/ extracts as above and dipped the "pops" into diff. icing colors put back in fridge to harden then when ready wrapped in pop cellophane baggies and tied w/ coord. ribbons!!

    How do you keep the cake from keeping it's color on the outside? The last time I made basketballs they came out golden and you couldn't even see the orange. I even cooked them less time.

    These are a lot better if you line a baking sheet with parchment paper and then dollop a teaspoon of cake batter in two rows and cut baking time to 6 to 8 minutes on the top rack of your oven, then there is not so much waste.

    You won't end up with bottoms. The recipe calls for only 1 tablespoon of batter in mini muffin tins. You use each one for a bottom and a top.

    now-a-days duff (the cake guy from food network channel) has his own line of neon or primary color gels at michaels in the cake decorating aisle. i think they range in price from 5 to 8 dollars ... they are in fairly bigger bottles than what you would see the traditional liquid dye in.

Usually made with chocolate cakes with white filling the chocolate ones are also made with peanut butter filling or made as pumpkin cakes with white filling. Could the batter simply be mounded on the cookie sheet and baked that way? It would eliminate the bottoms. However, the bottoms might be used to make a trifle. I left no review as I haven't tried this recipe.
