10 minutes, five ingredients and two steps is all you need to make this flavorful seafood and melon salad - perfect for dinner.

Ingredients

pints (4 cups) purchased seafood salad (from deli)
1/4
cup golden raisins
1
teaspoon curry powder
1/2
honeydew melon, seeded, cut into slices
2
tablespoons chopped salted peanuts

Directions

  • 1 In medium bowl, combine seafood salad, raisins and curry powder; stir gently to mix.
  • 2 Fan honeydew slices on individual serving plates. Spoon salad mixture onto center of melon slices. Sprinkle with peanuts.
Tips  

Toasted pine nuts or sunflower seeds can be used in place of the peanuts.

For additional sweetness and crunch, stir chopped apple into this salad. Or garnish it with fresh raspberries.

For Curried Chicken Salad, try chicken salad in place of the seafood salad.
