Not certain if you like curry? Don’t worry. This flavorful blend of couscous and sausage has just the right touch of curry.

Ingredients

pound bulk pork sausage

medium onion, chopped (1/2 cup)
1/4
cup pistachio nuts, chopped
1/2
teaspoon curry powder
1
garlic clove, finely chopped
2 1/4
cups water
2
tablespoons butter or margarine
1
tablespoon chopped fresh parsley
1/4
teaspoon salt
1 1/2
cups uncooked couscous

Directions

  • 1 Cook pork, onion, nuts, curry powder and garlic in 10-inch skillet over medium heat, stirring occasionally, until pork is no longer pink; drain.
  • 2 Stir in water, butter, parsley and salt; heat to boiling. Stir in couscous; remove from heat. Cover and let stand about 5 minutes or until liquid is absorbed. Fluff with fork.
Tips  

Couscous is made from semolina. It’s a delightful change from pasta, rice or noodles. You can often find it near the rice mixes in your grocery store.

Make this a colorful one-dish meal by stirring in 2 cups cooked frozen sweet peas just before serving.
