Rotisserie chicken salad (with grapes, cashews and green onions) mini sammies are a game day must for any svelte but hungry kicker (or kickette)! Try with reduced fat Grands™!!

Ingredients

pack Pillsbury™ Grands!™ biscuits (16.3 oz)

cups cooked white meat chicken, shredded
1/4
cup cashews, roughly chopped
1/2
cup red grapes, halved
1/4
cup chopped green onion (white and green parts, about 3)
Mayonnaise, to taste (use a light mayo, or herb - whatever you love or have on hand)
Spring mix, arugula, spinach or other greens

Directions

  • 1 Prepare biscuits according to package directions. Set aside to cool.
  • 2 Combine the chicken, grapes, cashews and green onion with enough of the mayonnaise to make a smooth salad. (Or to taste. I like a ton of mayo in mine, but that's not everyone's style!)
  • 3 Split the biscuits.
  • 4 Make a sandwich from a biscuit, a dollop of chicken salad, and a sprinkling of the arugula.
