A cookie and glass of skim milk anyone? This makes a perfect between-meal snack.

Ingredients

1 1/4
cups Gold Medal™ all-purpose flour
1/2
teaspoon baking soda
1/8
teaspoon salt
1/3
cup granulated sugar
1/3
cup packed brown sugar
2
tablespoons no-trans-fat vegetable oil spread
2
tablespoons canola oil
1/3
cup unsweetened applesauce
1/4
cup fat-free egg product
1 1/2
teaspoons vanilla
1
cup low-fat granola
4
oz dark or bittersweet chocolate, coarsely chopped

Directions

  • 1 Heat oven to 375°F. Line cookie sheets with cooking parchment paper.
  • 2 In small bowl, mix flour, baking soda and salt. In medium bowl, beat sugars, vegetable oil spread, oil and applesauce with electric mixer on medium speed until smooth. Beat in egg product and vanilla. On low speed, gradually beat in flour mixture.
  • 3 Stir in granola (breaking up any large pieces) and chocolate chunks. Drop by rounded teaspoonfuls onto cookie sheets.
  • 4 Bake 8 to 10 minutes or until golden brown. Cool 2 minutes; remove from cookie sheets to cooling racks. Cool completely, about 30 minutes.
Tips

To boost whole grains, reduce the all-purpose flour by 1/2 cup and add 1/2 cup whole wheat flour in its place.
