    Ingredients

    • 1 box Betty Crocker Super Moist white cake mix
    • 1 can Betty Crocker whipped fluffy white icing
    • 24  cupcake wrappers
    • 1  water, vegetable oil, & eggs called for on box
    • 3 drops each red, orange, yellow, green, blue and purple food coloring
    • 12 quart size freezer bags
    • 1/4 cup each red, orange, yellow, green, blue and purple candy melts
    • 1  wax paper

    Directions

    1. 1Preheat oven to 350 degrees. In a large bowl, combine cake mix, eggs, oil and water. MIx well.
    2. 2Divide batter into six quart freezer bags. Add 3 drops of food coloring into each bag so you have a bag of each color. Seal and squeeze bag to combine.
    3. 3Cut a corner off each bag and pipe out about 2 tsp. of each color into muffin tins lined with cupcake wrappers.
    4. 4Bake at 350 degrees for 18-22 minutes, until done.
    5. 5While cupcakes are baking, melt each color of candy melts in the microwave for 30 seconds at a time, stirring after each interval, until smooth.
    6. 6Spoon each color candy melt into a quart freezer bag, snip of an end, and use to draw "rainbows" onto wax paper. Let set completely.
    7. 7When cupcakes are cooled, frost with Betty Crocker fluffy white icing. Peel rainbows off wax paper and place on top to garnish.

These are really wonderful! My Granddaughter and I have made them many times to share with the neighborhood kids. We didn't make the rainbow tops. Instead, we frosted them with a simple cream cheese frosting and topped them with colored sugar.

You don't have to buy a whole bag of each of the candy melts. Bulk Barn sells them by weight and you buy as much or as little as you need.

You can add color to white chocolate instead of buying candy melts in different colors. It has to either be oil based color, or newer on the market, powdered food coloring. I don't know what happened with the person who claimed this only made 9 cupcakes. I imagine a huge mess! Looks like a fun idea.

DEAR ANONYMOUS, 9 CUPCAKE? DID THE REST OF THE CAKE BATTER WERE ON THE FLOOR, CEILING, WALL? YOU ARE SUPPOSE FILL ONLY HALFWAY. BUT I JUST SAW THEY SAID 2 TSP EACH COLOR. THAT IS ALOT OF TEASPOONS, NEXT TIME DO HALF THE TABLESPOON INSTEAD OF TWO TEASPOON, OR A TEASPOON AT A TIME.

These are currently in the oven. I have to say that they made very few and were really messy to make. Definitly will not be enough for my son's birthday party. I mean it only makes 9 cupcakes!!

Did this for the kids (and myself, I LOVE RAINBOWS) and they were amazing. Huge hit at our casa. I used AirHead Sour Strips as the rainbows...fantastic!

My Granddaughter and I made these today, and they were absolutely adorable. Now I really know what " A feast for the eyes" means. I can't believe how simple they were to make, but are so beautiful. We used wilton paste food coloring for the purple and orange layers. Also, some of the cupcakes we frosted with cool whip and the others were frosted with cream cheese icing. We will definitely be making these many times in the future.

These are so easy to make. I did these with the kids I watch. I had them separated the cake mix into little glass bowls. I added the food coloring to each bowl and they stirred it up each rainbow color. Then the spoon a spoonful or two in each cupcake liner. They were so shocked when they eat them. You should of heard them screamed....They're "Tye-Tied" and they were so happy that they made something this cool.

These are so wonderful!! Fun to make, even more fun to share :) Instead of candy melts I used melted, dyed white chocolate chips which made a soft yummy treat on top... and it's also a cheaper alternative to buying so many different bags of candy melts. Yum!

Candy melts really easy to find. You can find them int Jo-Anne's, Michael's or any other craft store that has a baking section. I think they're just little disks of white and milk chocolate.
