    Ingredients

    • 1 1/4 cups unbleached all-purpose flour
    • 1/3 cup sugar
    • 2 tsp baking powder
    • 1/2 tsp nutmeg
    • 1/2 tsp salt
    • 1  egg
    • 1/2 cup milk
    • 2 tbsp melted butter
    • vegetable oil
    • 1/4 cup sugar (for the topping) (optional)
    • 3 tbsp cinnamon (for the topping) (optional)
    • 1/2 cup confectioners sugar (for the topping) (optional)

    Directions

    1. 1In the bowl of a stand mixer, combine flour, sugar, baking powder, nutmeg and salt. Add in milk, egg, and melted butter, and mix until well combined.
    2. 2Fill a large skillet or medium pot with vegetable oil, about 2 inches deep. Using a fry thermometer, heat oil to about 375 degrees F. Make sure it stays around that temperature each time you fry the dough.
    3. 3Place cinnamon-sugar (mixed together) and confectioners sugar toppings in two separate small bowls. Set out several stacked paper towels next to the stove for drying the doughnut holes, along with a cooling rack with parchment paper underneath.
    4. 4When oil is ready, place about 5-6 teaspoonfuls of dough at a time in the oil and fry on each side for about 1 minute (2 minutes total). Remove from the oil and place on paper towel to soak up excess oil. Then, using a fork, roll doughnut in either the confectioners sugar or cinnamon-sugar mixture. Then place on cooling rack to cool slightly before serving warm.

    Are these Doughnut holes suitable for piping in some jam/jelly? I wanted to make these in a couple days and was just wondering? thanks : )

    Hi Anon - If you were decreasing the recipe, you would also want to decrease the egg used. I'd recommend mixing the egg in a separate bowl, so that the white and yolk combine. Then use 1/4 or 1/2 per your recipe yield preference.

    Hi xblondie - Self-rising flour is all-purpose flour with baking soda and salt added. You may attempt to substitute by decreasing the amount of baking soda in the recipe by 1 1/2 tsps per cup of flour. It is not, however, recommended to substitute as the final product may rise too much or rise and then fall.

    Hi Anon - The Bella Donut Hole Maker bakes, rather than fries, the dough. It should still work, but it will taste differently than if you were to fry it like the above instructions.

    Hey! If you want a glazed doughnut, or maybe a delicious drizzle, try this!: 1⁄2 cup confectioners sugar 2 to 2 1⁄4 tsp milk It makes them really sweet and taste like they're store bought! The glaze should be a smooth frosting texture. Put the doughnut holes on a fork, or hold with tongs, dip them then set them on a wire rack. Make sure you have something under the rack because they will drip. While they're cooling on the rack you can sprinkle brown sugar, or sprinkles for the kids! Or just take them right from the glaze and roll them in your toppings. Hope you enjoy it!

    That's what I called them too when I brought them into work for my co-workers to try. BTW I'm a big fan of yours and follow you blog closely. Wish I had more patience for working with dough, I love bread but scared to start making it.. all the kneading and waiting for it to rise..

    Pengu_pen, I had some with tails, too (they looked like sugar-coated whales!). It happens sometimes when the dough isn't a completely perfect round shape when dropped in the hot oil. I'm glad you still found them delicious, though!
