    Ingredients

    • 6 ounces fresh Udon noodles
    • 1 tablespoon unsalted butter
    • 1 large egg, beaten
    • 1 Pinch red pepper flakes
    • 1 tablespoon brown sugar
    • 1 tablespoon soy sauce
    • 1 tablespoon sriracha chili sauce
    • 1 teaspoon rice wine vinegar
    • Fresh cilantro
    • Chopped scallions

    Directions

    1. 1In a small bowl, whisk together brown sugar, soy sauce, chili sauce, and rice wine vinegar.
    2. 2Cook udon noodles according to package. Drain and set aside.
    3. 3In a medium skillet (nonstick works best), melt butter over medium heat. Once melted, add egg and scramble lightly.
    4. 4When egg is almost cooked, season with a pinch of red pepper flakes and add sauce to the skillet. Cook for 20 seconds so sauce can reduce slightly.
    5. 5Add udon noodles to skillet and toss everything to combine.
    6. 6Serve immediately and garnish dish with fresh cilantro and chopped scallions.

    My grocery store didn't have udon noodles, so I had to punt and used ramen noodles (without the seasoning packet) instead. Very yummy, but I would think the thicker udon would be even better!
