Dragon Noodles

Ingredients

  • 6 ounces fresh Udon noodles
  • 1 tablespoon unsalted butter
  • 1 large egg, beaten
  • 1 pinch red pepper flakes
  • 1 tablespoon brown sugar
  • 1 tablespoon soy sauce
  • 1 tablespoon sriracha chili sauce
  • 1 teaspoon rice wine vinegar
  • Fresh cilantro
  • Chopped scallions

    In a small bowl, whisk together brown sugar, soy sauce, chili sauce, and rice wine vinegar.

    Cook udon noodles according to package. Drain and set aside.

    In a medium skillet (nonstick works best), melt butter over medium heat. Once melted, add egg and scramble lightly.

    When egg is almost cooked, season with a pinch of red pepper flakes and add sauce to the skillet. Cook for 20 seconds so sauce can reduce slightly.

    Add udon noodles to skillet and toss everything to combine.

    Serve immediately and garnish dish with fresh cilantro and chopped scallions.
