Easy Apple Crumb Bars

With just a few ingredients you can make these buttery apple crumb bars.

Ingredients

  • Confectioners sugar
  • Ground cinnamon
  • 1 tbsp granulated sugar
  • 1 apple, chopped into small pieces
  • 1/2 cup unsalted butter, melted
  • 1 pouch (17.5 oz) Betty Crocker™ Sugar Cookie Mix

Steps

    Preheat the oven to 375°F.
  • 2
    In a medium bowl. stir together the cookie mix and butter until fully moistened. Press the mixture into the bottom of an ungreased 13x9-inch pan, reserving 1/4 cup.

    Sprinkle the apple pieces over the cookie dough followed by the granulated sugar. Dust with a light coating of cinnamon. Crumble the reserved cookie mixture over the top.

    Bake for 30-35 minutes, until golden at the edges. Let cool for 15 minutes, then sift confectioners sugar over the top of the bars.

    Cut into 12 squares and serve warm or cold.

    Once upon a time, I thought you risked life and limb by not following package directions for mixes to a T. I thought disaster would ensue if I deviated even the slightest bit from what the instructions said.

    I’ve since learned better.

    Though mixes are intended for certain purposes, you won’t burn down the house or maim anyone by using a mix for something other than its intended purpose. So those Thai noodles soups? I use less water and make them pastas instead. 

    Cookie mix is a great mix to use for other purposes too. It can be transformed into a crust for a pie (double cookie pie, perhaps? Might have to develop that one!). It can be used as a crumbly topping on a fruit crumble.

    Or, you can take cues from both of these and use it as a cookie-ish base AND crumble topping for Easy Apple Crumb Bars.

    With apple season fast approaching, now is the time to make some delicious apple-y treats like this.

    Now, if you are worrying that these will be cloyingly sweet or just too much – don’t! The apple (I used a Fuji, but a Granny Smith would work too) lends a bit of tartness that offsets the sweetness. Also, since the cookie base is made with just mix and butter, it has a great undiluted buttery-ness to it as well.

    Just try ‘em. You won’t be disappointed.
