Ya got your chicken. Ya got your quinoa. Ya got your veggies. All smiles, baby.

Ingredients

  • 1/2 cup regular quinoa
  • 1/2 cup red quinoa
  • 1 rotisserie chicken, shredded (skin and bones discarded)
  • 1 (7 ounce) package frozen vegetables
  • 1 tablespoon from 1 container (6.25 oz) Old El Paso™ Original Taco Seasoning Mix
  • 1 pinch salt and pepper
  • 4 cups mixed greens

Steps

    Bring a pot of water to a boil. Add the quinoa and cook until little spirals form, about 20 minutes. Drain and return to the pot.

    Steam the veggies according to package directions.

    In a large bowl, combine the shredded chicken, veggies, quinoa, taco seasoning and a large pinch of salt and pepper. Toss to combine.

    Serve warm salad over a bed of mixed greens!

    I have to tell you something. I absolutely LOVE shredding a rotisserie chicken. I love it. I don't know what it is. The pulling away of the slippery skin? The effortless removal of bones and tendons? And no I'm not a serial killer, thanks. It's just all so therapeutic and calming for my brain. I'm not a psychopath either.

    Actually the verdict is still out on that one.

    SO, ANYWAY. Hello. Guess what. I made you an Easy Chicken Quinoa Salad today! It's so crazy delish I almost can't talk about it. Who are we kidding? Yes I can.

    There's just something ABOUT it. A nice textured mix of red and white quinoa, warm, buttery steamed veggies, the shredded chicken that I talked a little too creepily about, and taco seasonings. Mix it all up and put it on some mixed greens, haaaaaaaave the mercy.

    Okay, so grab some shredded chicken (or any leftover chicken you have lying around), some steamed veggies from Green Giant (I went with this one that had black beans in it because my soul cavity lead me that direction), some Old El Paso taco seasoning, some mixed greens and quinoa! Now, I went with a mix of red and white, but if you want to keep it simple and just use one color, das jerst fahn.

    Okay, so you'll cook your quinoa until little spirals have formed ya know. And then steam your veggies. Now just mix it all up in a huge bowl! This is how it looks before it's mixed.

    And here's the after. Because apparently I needed to show you HOW TO MIX SOMETHING UP.

    Then just serve it over the mixed greens and you're ready for action!

    By action I mean eating. Eating the salad. The chicken quinoa salad. The Easy Chicken Quinoa Sal - yeah you got that.
