    Ingredients

    • SEASONING
    • 1  teaspoon chili powder
    • 1  teaspoon pepper
    • 1  teaspoon paprika
    • 1/2  teaspoon dried basil leaves
    • 1/2  teaspoon celery seed
    • 1  teaspoon minced garlic
    • STEW
    • 8  boneless skinless chicken thighs (1 1/4 to 1 1/2 lb.), cut into bite-sized pieces
    • 2  teaspoons olive oil or oil
    • 1  medium onion, chopped
    • 1  green bell pepper, chopped
    • 1  red bell pepper, chopped
    • 1  cup quick-cooking barley
    • 2  cups 1/3-less-salt chicken broth
    • 1  cup water
    • 1  (14.5-oz.) can Italian style stewed tomatoes, undrained, cut into large pieces
    • 1  (15.5-oz.) can Green Giant® or Joan of Arc® Dark Red Kidney Beans or 1 (15-oz.) can Green Giant® Bla
    • 1  (4-oz.) can chopped green chiles, reserving 2 tablespoons
    • TOPPINGS
    • 2/3  cup light sour cream or nonfat plain yogurt
    • Reserved 2 tablespoons green chiles

    Directions

    1. 1In small bowl, combine all seasoning ingredients; mix well. In medium bowl, combine chicken pieces with half of seasoning mixture; toss to coat. Reserve remaining seasoning.
    2. 2Heat oil in Dutch oven or large saucepan over medium-high heat until hot. Add chicken and onion; cook and stir 5 to 6 minutes or until lightly browned. Add bell peppers; cook and stir an additional 2 to 3 minutes or until vegetables are crisp-tender. Add barley, chicken broth, water, tomatoes and remaining seasoning mixture; mix well. Bring to a boil. Reduce heat; cover and simmer 15 minutes or until barley is just tender and chicken is no longer pink, stirring occasionally. Stir in beans and chiles; simmer an additional 10 to 15 minutes.
    3. 3To serve, garnish individual servings with toppings.
