Like a lot of cooks, you probably tweak recipes slightly to suit your family's tastes and diets. A little extra spice here... sub low-fat sour cream there...

Make Balsamic Vinaigrette, refrigerate.
Cut goat cheese into 8, 1 oz. pieces. roll to coat in bread crumbs. Place on small baking sheet, cover and refrigerate until right before serving. When ready to serve, warm in a warm oven for 5 minutes to soften.. Do not let melt.
Toss dressing and butter lettuce. Sprinkle with pistachios.
Place a serving of lettuce and nuts on each salad plate. Top with warm goat cheese medallion.
