Visit the Mediterranean without leaving home. This salad combines fresh salad greens with olives, artichoke hearts and feta cheese for authentic Greek taste.

Ingredients

bags (10 oz each) mixed salad greens

can (6 oz) pitted ripe olives, drained

cup Italian vinaigrette dressing

jar (6 to 7 oz) marinated artichoke hearts, undrained

cup crumbled feta cheese

small zucchini, thinly sliced

Directions

  • 1 In large bowl, toss greens and olives. Add dressing and artichoke hearts with marinade; toss to mix.
  • 2 Sprinkle cheese over salad. Top with zucchini.
Tips
