    Ingredients

    • 1 medium yellow tomato
    • 2 1 c size tomatillos fresh
    • 4 medium poblanos, deseeded and halved
    • 8 medium green tomatoes or equivalent measure
    • 2 large ripe roma tomatoes
    • 1/2 cup chopped fresh cilantro
    • 1/4 cup lime juice
    • 1 tsp black pepper
    • 2 tsp table salt
    • 2 cloves fresh garlic

    Directions

    1. 1On a foil lined pan roast sliced onions, peppers and garlic with halved tomatillos until soft.
    2. 2While cooking, blanch tomatoes in scalding water 12 minutes, then drain.
    3. 3Add all ingredients to a blender and mix well until sauce is evenly textured.
    4. 4Use as a dip, or in enchiladas. Store refrigerated up to 10 days.
    5. 5(For extra flavor kick up some heat by adding 2 tsp jalapenos to the blender.)
