This Easy Roast Duck proves that roasting a duck needn't be difficult. And this simple recipe is scrumptious to boot. 0


to 5-6 lb.duck
cups boiling hot water
tablespoons kosher salt
teaspoons black pepper


  • 1 Preheat oven to 425 degrees.
  • 2 Cut tips off wings. Remove and discard excess fat from body cavity and neck.Rinse duck well in and out. Make fork xxxxxx all over the duck's skin. Fold neck skin under body. Place duck breast side up on roasting rack in a 13 x 9 x 3 inch pan. Pour boiling water all over duck. This will tighten the skin. Let cool and pour out any water inside the body cavity into pan. Pat dry, inside and outside. Do not throw out water in pan. Rub duck with salt and pepper both inside and outside.
  • 3 Roast the duck on the middle shelf for 45 minutes. Remove from oven, and carefully turn duck over and roast for 45 more minutes. Remove from oven and dump juices into pan. Put the duck back in oven breast side up again. Roast until skin is crispy, about 45 more minutes. Remove from oven. Dump out liquid from body cavity.
  • 4 Let cool 15 minutes before carving.
