Ingredients

  • 2 pasteurized egg whites
  • 1/2 teaspoon vanilla extract
  • 3 3/4 cups powdered sugar

    In a large stand mixer, beat egg whites and vanilla together until soft peaks form. Add powdered sugar 1/2 cup at a time, mixing until smooth. Turn speed up to high and whip mixture until stiff and glossy. Use immediately or promptly store refrigerated in an airtight container or plastic bag, since the icing dries out and hardens very quickly.
