    Ingredients

    • 1  package Betty Crocker® scalloped potatoes
    • 2  cups boiling water
    • 1  tablespoon margarine or butter
    • 3/4  cup half-and-half
    • 4  cup chopped green onions

    Directions

    1. 1Heat oven to 400°. Stir together Potatoes, Sauce Mix, boiling water and margarine in ungreased 1 1/2-quart casserole. Stir in half-and-half and green onions. Bake uncovered 30 to 35 minutes or until top is golden brown and potatoes are tender. Let stand a few minutes. (Sauce will thicken slightly as it stands.)

    These look awesome. I usually try to make my own scalloped potato mix but it's never as good as when I use the Betty Crocker version. I like to add some prosciutto if I'm feeling classy ... changes the flavor just a touch but it's just as tasty. I think I found the recipe on this site http://www.blissplan.com/mixed-bag/give-your-old-kitchen-items-a-new-lease-on-life/ - they included roasted pecans too I think.

    Betty Crocker boxed potatoes work well in recipes like this. Quick and easy too. I almost always bake them and not use the stovetop method. I like to add cubed or chunk ham (cheesy scalloped boxed potatoes work good too), broccoli (or frozen spinach) and top with french fried onions about the last 10 minutes. If my kids like it, it must be good.
