Here is a slow-cooker chicken dinner to celebrate--three simple ingredients, and dinner is ready when you are.

Ingredients

Chicken

boneless skinless chicken breasts (about 2 1/2 lb)
1
bag (11.8 oz) frozen honey roasted sweet corn, thawed
3/4
cup tomatillo salsa or salsa verde

Garnish, if desired

Chopped fresh cilantro

Directions

  • 1 Spray 5- to 6-quart oval slow cooker with cooking spray. Place chicken in slow cooker.
  • 2 Scatter thawed corn over top of chicken; pour salsa over all. Cover; cook on Low heat setting 3 1/2 to 4 hours or until juice of chicken is clear when center of thickest part is cut (at least 165°F).
  • 3 Use slotted spoon to remove chicken, salsa and corn from slow cooker. Serve chicken topped with corn salsa mixture. Sprinkle with cilantro.
Tips  

If you are watching your salt intake, be sure to look at the nutrition label for the tomatillo salsa. They can vary greatly by brand. We found the refrigerated varieties to be lower in sodium. The variety we used had 90 mg of sodium per 2 tablespoons.

Serve this easy dinner topped with light sour cream, avocado wedges, fresh chopped tomatoes or a little sprinkle of cheese. Rice makes a great accompaniment.

If you like things on the hot side, add a chopped jalapeño or serrano chile to the salsa verde before you pour it into the slow cooker.

Green salsas are typically made with tomatillos, green chiles and chopped fresh cilantro. They are usually labeled as tomatillo salsa or salsa verde.
