    Ingredients

    • 2  medium onions, chopped (1 cup)
    • 2  cloves garlic, finely chopped
    • 3  cups chicken broth
    • 2  tablespoons chopped fresh cilantro or 1/2 teaspoon ground coriander
    • 2  tablespoons lime juice
    • 11/2  teaspoons ground cumin
    • 1/2  teaspoon dried oregano leaves
    • 1/4  teaspoon red pepper sauce
    • 1/4  teaspoon salt
    • 1  can (11 ounces) white shoepeg corn, drained
    • 2  cans (15 to 16 ounces each) great northern beans, drained
    • 2  cups chopped cooked chicken breast
    • Salsa verde

    Directions

    1. 11. Spray Dutch oven with cooking spray; heat over medium heat. Cook onions and garlic in Dutch oven, stirring occasionally, until onions are tender.
    2. 22. Stir in remaining ingredients except chicken and salsa verde. Heat to boiling; reduce heat.
    3. 33. Simmer uncovered 20 minutes. Stir in chicken; heat until hot. Serve with salsa verde.
